Instant Pot Recipe Pulled Pork Tacos – it’s easy and DELICIOUS!

*KETO Friendly if you limit the corn tortilla – check carb count or use low-carb tortillas. Soy sauce may also have hidden sugar. Use a sugar free, low-carb brand of soy sauce! Also, you can wrap pork taco in large lettuce leaves instead for almost no-carb option!
Ingredients for Pork
- 4 lb. pork roast (with or without bone)
- 2 1/2 tbsp. cumin – powder
- 1 1/5 tbsp. oregano – dried
- 1 tsp. chipotle – powder
- 1 tbsp. sea salt (pink Himalayan)
- 2 tsp. pepper
- 8 tsp. garlic – minced
- 1 onion – diced
- 1 1/2 tbsp. soy sauce
- 1 cup chicken broth (or any good stock)
- 1 green pepper – diced (optional)
Taco Topping Ingredients
- tortillas (corn is best)
- salsa, pico de gallo, or chopped tomato
- cilantro – chopped (optional – but so good!)
- lettuce
- avocado
- grated cheese
- Lime cream sauce – (to die for) 1 cup sour cream mixed with a sprig of fresh cilantro – chopped, and fresh squeezed lime juice stirred together – place in baggie, chop triangle corner off of baggie to drizzle on top of each completed pork taco – DELICIOUS!
Instructions
- Mix dry ingredients (cumin, oregano, chili, chipotle, salt, pepper) in small bowl. Rub pork roast with dry mix. Sear pork roast in Instant Pot on saute mode. Brown on all sides.
- Add onion, garlic, soy sauce, and broth to Instant Pot. Close lid and cook on High Pressure for 90 minutes.
- Chop and prepare favorite toppings (see our list or create your own). Place toppings in small bowls to set up a DIY taco bar. Brown and heat tortillas in large skillet for an added touch.
- Once 90 minutes cook time is complete – release steam. Place roast on plate or large bowl to pull apart with two large forks. Remove any bones.
- For individual tacos – place meat in tortilla (or lettuce wrap) and fill with toppings of choice. Fresh squeezed lime juice is the perfect addition.
