New to the Sous Vide cooking? Sous Vide is a style of cooking used in high end restaurants, and the term sous vide literally means under vacuum.
The results are incredible, but the process is a bit different than other methods of cooking. Food is placed in vacuum bags (or a Ziploc with air eliminated), and submerged in water. The immersion circulator is set to your desired final temperature and holds the water at that temperature. Foods are cooked to a lower temperature, but for a longer time, resulting in melt in your mouth meats and evenly cooked poached eggs and veggies. .
